Vanilla Madeleines Recipe
“These are my simple vanilla madeleines, you can easily create different tastes by adding lemon zest, orange zest, honey, chocolate chips… the possibilities are endless!”
Ingredients:
- 3 eggs
- 100g caster sugar
- 100g plain flour
- 100g butter melted
- ½ tsp of baking powder
- Vanilla paste or pods for extra flavours
Method:
- In a bowl mix together eggs and caster sugar for 1-2 minutes
- Add the baking powder and the flour in gradually (a third at a time)
- Once combined, add the melted butter, do not over mix
- Place in the moulds about three quarters full and leave it to chill for at least 2h, if you don’t have that much time leave it in the freezer for 1 hour
- What makes them rise like a camel is the swap from the cold to the oven
- In a pre-heated oven of 180 degrees cook the madeleines for 13 minutes
- Let it cool for 2 minutes and then transfer to a rack to cool (eat one still warm if you can’t resist)
- They will stay fresh over 4 days in an airtight container
