A sweet hybrid recipe, cinnamon roll pancakes combines two tasty American breakfast foods: cinnamon rolls and pancakes. This (admittedly) super-sugary dish has recently been doing the rounds on video platform TikTok, where creators have been reviving pancake recipes in the lead up to Shrove Tuesday.

But how did this particular pancake recipe come about? According to Pinterest Predicts 2024, mashup recipes and concepts will be all the rage this year – from cheeseburger tacos and pizza pot pie to gummy candy kabobs and, now, cinnamon roll pancakes. The ultimate option for those who struggle between their favourite foods, the trend will no doubt pop up again and again throughout 2024.

Recipe: Cinnamon Roll Pancakes
We’ve scoured TikTok for some of the platform’s best cinnamon roll pancake recipes and have collated them into the ultimate C&TH edition. Enjoy!

Ingredients
For the pancakes
- 1 egg
- 300ml milk
- 50ml oil
- 180g cup flour
- 2 tsp baking powder
- 1 tbsp sugar
For the cinnamon sugar
- 4 tbsp butter (softened)
- 50g sugar
- 2 tsp cinnamon
- 1 tbsp of pancake batter
For the icing
- 240g powdered sugar
- 1 tbsp milk
Method
- Make the pancake batter: Whisk the egg until slightly lighter in colour and then mix in the wet ingredients for the pancake mix. Once everything is combined, add in the dry ingredients and whisk until the batter is smooth and no longer has clumps. Set aside.
- Make the cinnamon sugar:Â Combine softened butter, sugar and cinnamon, then add 1 tsp of the pancake batter and mix until smooth. Fill a piping bag with the mixture, and when you’re ready to use it snip off the tip.
- Cook the pancakes:Â Heat up a pan, and then on medium heat coat the pan with a little bit of butter. Once melted, scoop out some pancake batter onto the pan (around 60ml per pancake) and then swirl the cinnamon sugar mixture on top using the piping bag. Cook for around one to two minutes, then add a teaspoon of water to the edge of the pan and cover with a lid. Cook for another one to two minutes, before removing the pancake from the pan. Repeat the process, adding more butter to the pan when needed, until you have cooked all your pancakes.
- Make the icing:Â Whisk together powdered sugar and milk until smooth.
- Build your cinnamon roll pancakes:Â Stack your pancakes and drizzle over a generous helping of icing.
