Pipp & Co: What’s The Hype Behind This Bristol Bakery?

This cult doughnut spot is making waves


For a while now, Bristolians have been flocking to St Nicholas Market on Fridays for a taste of Pipp & Co’s legendary doughnuts. But now, locals will be able to devour their baked goods every day of the week, as the business has just opened its first permanent cafe in Bristol. On its first day of opening, the doughnuts were sold out by lunchtime – so what’s all the hype about?

Pipp & Co Opens Its First Cafe

In 2015, Mario and Betina Evangelista bought an artisan bakery, known then as Pippin & Co. Back then it was a small bakery which sold its goods primarily at farmers’ markets, but they grew the business by expanding into stockists and running regular pop-up shops.

‘It was a very different business when we bought it,’ says Betina. ‘It had been set up by two patisserie chefs, who were mainly selling into farmers’ markets. We still sell our doughnuts at farmers’ markets and many of these we have been visiting for years. We have a great and loyal customer base, there is a very special atmosphere, and we love visiting the markets.’

Mario added: ‘Betina and I had been in the food business when we were much younger, running a small restaurant for a couple of years. Life then took us on a different path however the passion for good food stayed with us and as our children got a bit older, we were looking for an opportunity.

‘By chance we came across the doughnut business at a farmers’ market with a massive queue and we thought we just had to try some of those doughnuts. We bought the business, and the rest is history.’

In 2022, the business moved to a larger premises in Swindon, which allowed it to upscale even more – nowadays, Pipp & Co produces over 20,000 doughnuts a week on average.

This July, the pair are venturing into new territory with the launch of their first permanent cafe. Pipp & Co has opened on College Green in Bristol – which could be the first of many branches. ‘If Bristol is successful, and we believe it will be, we have plans to open more cafes in other locations,’ says Mario.

What To Order

The doughnuts are the star attraction here, freshly made each morning in a whole host of flavours. You can expect all the classics, including chocolate, berry jam and vanilla custard, alongside seasonal specials, like Pimm’s and strawberries and cream.

Alongside this, the cafe serves other sweet pastries, including cinnamon rolls and ‘cruffins’ (a croissant/muffin hybrid), sandwiches and sausage rolls.

The bakery is located at College Green in Bristol. It also pops up at independent markets, stores and restaurants across the country, from Reading to Oxford – you can find the full list here. Online delivery is also available for some locations.
