Did you know there are over 350 types of pasta out there? Different varieties lend themselves well to different dishes: delicate sauces pair best with thin, ribbon-like styles, while lasagne sheets are ideal for baking in the oven. When it comes to soups, though, the name to look for is pastina: the smallest type which literally translates as ‘little pasta’. It’s often cooked in a broth-like dish which is simply referred to as pastina – here’s how to make it this autumn.

What Is Pastina?
Pastina is a type of tiny pasta with a diameter of around 1.6mm, typically with a round shape and made of wheat flour. Most commonly you’ll find it in a soup or broth, but it’s also used in salads, desserts and risotto-style pasta dishes.
However, the term pastina can also refer to a traditional Italian comfort food dish made using this specific type of pasta. It’s commonly seen as Italy’s answer to chicken noodle soup: a nourishing dish for when you’re feeling a little under the weather, hence its nickname, Italian penicillin.

How To Make Pastina
With the weather getting cooler, TikTokers have begun sharing their recipes for the autumnal dish online. Everyone has their own versions, but pastina is traditionally made with chicken broth, butter and parmesan, creating a rich, creamy dish. Here’s an easy recipe below.
Ingredients:
- 200g pastina
- 450ml chicken stock
- 20g unsalted butter
- 115g parmesan
- Pinch of salt and pepper
Method:
- Heat chicken stock in a pan until it comes to a boil.
- Add salt and pepper as desired.
- Add the pastina and stir well. Reduce the heat to low and simmer for around six to eight minutes, or until the pasta is tender.
- Turn off the heat.
- Use a ladle to reserve one cup of pasta water.
- Add the cubed butter and toss to coat.
- Add the parmesan and toss to coat.
- Add the reserved pasta water and stir.
- Garnish with another sprinkle of parmesan cheese and lots of black pepper.
Variations
- Some recipes add egg to this dish – if you want to do this, add one beaten egg at the same time as the butter and parmesan.
- You can also jazz it up by adding vegetables such as celery and carrots.
- For a more soupy meal, add more broth to the pot. If you want it richer, stir in more butter and cheese.
