The humble cucumber is having its time in the spotlight. First TikToker Logan Moffitt went viral for his cucumber-focused recipe videos – including one particularly popular idea which sees cucumber sliced and mixed with ingredients like soy sauce, sesame oil and green onions. And now another recipe has taken off: the sushi cucumber salad. This involves mixing the ingredients typically found in sushi rolls into a salad – an affordable twist on the Japanese dish, which can often be expensive and time-consuming to make. What Is A Sushi Salad?

A sushi salad is essentially a deconstructed sushi roll, which sees classic sushi ingredients mixed together, such as rice, vegetables, edamame beans and, of course, the trending fruit of the moment: cucumber. They are nutritious, simple to make, and can be jazzed up in all sorts of ways.

TikTok and Instagram are awash with sushi salad recipes right now, but one in particular has soared to popularity: a spring roll cucumber salad created by user Mayra Weldolyne (@lowcarblove on TikTok) which has amassed over six million views. This one includes grilled chicken, red pepper and a peanut dressing – but there are many variations on the sushi salad. We’ve shared three of our favourites below.

Recipe: Spring Roll Cucumber Salad

Serves 1

Ingredients:

  • 1 cucumber
  • Red pepper
  • Purple cabbage
  • Edamame beans
  • Grilled chicken
  • Sesame seeds
  • Peanut dressing

Method:

  1. Mix all the ingredients together in a jar.
  2. Make a peanut dressing using ingredients like peanut butter and tamari.
  3. Put the lid on, give it a shake and enjoy!

  • 1/2 cucumber, diced
  • 5 spring onions (green parts), finely chopped
  • 1 cup cooked sushi rice
  • 1/2 avocado, diced
  • 2 tbsp pickled ginger
  • 120g tinned tuna, drained
  • Small handful of shredded kale
  • 1 tbsp Kewpie mayo
  • 1 tsp soy sauce
  • 1 tbsp crispy shallots
  • 1 tsp furikake 

Method:

  1. In a bowl, combine the cucumber, spring onions, sushi rice, avocado, pickled ginger, tinned tuna, shredded kale and crispy shallows.
  2. Drizzle the Kewpie mayo and soy sauce over the mixture.

Recipe: Tuna Sushi Salad

@emthenutritionist Sushi salad. All the flavours of sushi, in a super simple and easy salad mix. Full of protein, healthy fats and fibre perfect for keeping you full and energised. The picked radishes in this are a must and provide freshness as well as help balance blood sugar levels. Ideal for prepping, left overs will last 2 days. You will need to serve 2 452kcal and 35g protein 1 medium avocado, diced 1/2 cucumber, deseeded and diced 250g pack of brown precooked rice (I used Tilda) 2 spring onions, diced 2 Nori sheets, shredded 2 tins tuna, drained For the pickle 10 pink radishes 100ml rice vinegar 100ml water 1 heaped tsp sugar For the dressing 3 tbsp light soy sauce 1 hepaed tsp tahini 1 tsp wasabi paste 1-2 tbsp mirin Thinly slice your radishes, I used a mandolin. Mix 100ml rice vinegar, 100ml water and 1 tsp sugar together. Warm on the hob or in the microwave until just below simmering then turn off the heat. Drop the sliced radishes into the pickle and leave to one side. Mix the dressing ingredients together and set to one side. Simply mix all the salad ingredients together, top in the cold rice pack, a few spoonfuls of the drained pickled radishes, then toss through the dressing.   • 1 medium avocado, diced
  • 1/2 cucumber, deseeded and diced
  • 250g pack of brown precooked rice 
  • 2 spring onions, diced
  • 2 Nori sheets, shredded
  • 2 tins tuna, drained

For the pickle

  • 10 pink radishes
  • 100ml rice vinegar
  • 100ml water
  • 1 heaped tsp sugar

For the dressing

  • 3 tbsp light soy sauce
  • 1 heaped tsp tahini
  • 1 tsp wasabi paste (mine was mild! So add to taste)
  • 1-2 tbsp mirin to taste

Method:

  1. Thinly slice your radishes, I used a mandolin. Mix 100ml rice vinegar, 100ml water and 1 tsp sugar together. Warm on the hob or in the microwave until just below simmering then turn off the heat. Drop the sliced radishes into the pickle and leave to one side.
  2. Mix the dressing ingredients together and set to one side.
  3. Simply mix all the salad ingredients together, top in the cold rice pack, a few spoonfuls of the drained pickled radishes, then toss through the dressing. Serve with extra nori on the side for scooping.
