Ynyshir x Dorian: Two Cult Restaurants To Host Exclusive Dining Experience

Caviar will be the star of the show in this luxurious collaboration event


Gareth Ward’s two Michelin-starred restaurant Ynyshir is one of the UK’s most unique restaurants, combining a techno soundtrack with a 30-course tasting menu. However, being perched on the edge of Snowdonia National Park in rural Wales, it’s not the easiest place to get to. This June, though, the eatery is making its way to London for an exclusive dining experience running in collaboration with Notting Hill’s Dorian, one of the capital’s buzziest spots right now.

Hosted by caviar brand N25 Caviar, the event will see Ward joining forces with Max Coen, head chef of one Michelin-starred restaurant Dorian. Caviar will take centre stage, woven throughout the menu, with each meal kicking off with a masterclass hosted by N25 founder Hermes Gehnen. 

Afterwards, diners will enjoy a showstopping tasting menu created by the two chefs. Designed for sharing, the meal will kick of with small plates including langoustine rosti, N26 caviar custard with broad beans, and Orkney scallops with a fermented apricot sauce. Next, there will be larger dishes such as Dover sole with sweetcorn chowder, cockles and pil pil, as well as Dorian’s signature T-bone steak, served with pink fir potatoes. 

For dessert, guests will be treated to French toast served in hazelnut butter with stracciatella ice cream, alongside Ynyshir’s banana soft serve with birch syrup. To finish? A final helping of caviar, of course. 

Hermes Gehnen, founder of N25 Caviar, says, ‘I wanted to bring Max and Gareth together because they are product fanatics. They embody the essence of N25 as they are both known to make no compromises on produce and are always on the hunt for the best quality. I’m eager to see them come together to showcase N25 in their unique ways that echo our philosophy.’

Housed inside a former shooting lodge, Ynyshir has transformed since being taken over by Ward in 2016. It focuses on Japanese-inspired fare made with world-class ingredients, alongside a bespoke DJ set to guide diners through the four-hour gastronomic experience (complete with a spinning disco ball to up the party vibes).

Dorian, meanwhile, has been an instant hit, securing a Michelin star within just two years of opening – as well as a spot in the UK’s National Restaurant Awards. A British bistro, it focuses on wood-fired grill dishes alongside signature rostis and an extensive wine list. The two restaurants are known for their high-energy atmosphere, and caviar features on both menus, making them fitting partners for this special event.
