Nobu fans, here’s your chance to meet the man behind the sushi. This February, Chef Nobu Matsuhisa has teamed up with Sake-Master Fumio Hazu of Hokusetsu Sake Brewery to host two intimate dinners, featuring a gourmet 8-course tasting menu paired with a selection of premium sakes. For the first dinner, dishes include Nobu classics such as yellowtail jalapeño with yes soy and toro tartar with caviar and wasabi soy, followed by mains like lobster kohlrabi spinach dry miso salad and slow-cooked Japanese beef with Jerusalem artichoke puree. The menu for the following evening is equally enticing, with sashimi four ways to start, followed by the likes of wagyu steak, sea bream with ginger and chives, and a coconut and kaffir lime mousse to finish.
Nobu has been serving only Hokusetsu sake across its restaurants since 1987, when a friend of Nobu’s brought a bottle to the original Matsushia restaurant in Beverley Hills. Impressed by the quality, Nobu asked for an exclusive deal, promising in return that his restaurants would not pour any other kind of sake. Today, it’s the only restaurant in the world serving Hokusetsu sake. The Oma-Sake dinners feature some of Nobu’s personal favourites, including the acclaimed Hokusetsu Cho-Daiginjo YK 35, a rare and luxury variety, and Hokusetsu Junmai Dai-Ginjo, a superior sake with a cherry blossom finish. During the meal guests can enjoy traditional live performances alongside conversations with Nobu himself. You’ll also receive a signed copy of his latest cookbook, World of Nobu, so you can try creating some of Nobu’s iconic creations at home.
