How To Make TikTok’s Brie And Cranberry Flowers

As the Christmas party looms and everyone starts wondering what to cook, TikTok has rallied with more ideas than there are Hallmark Christmas movies. Yet one stands out, offering a new twist on an old classic which is easy to make and looks impressive on the dining table: brie and cranberry flowers, created by user @mumsfoodies.
Everyone knows that brie and cranberry are a divine pairing. A wedge of soft, creamy brie combined with the sweet tang of freshly made cranberry sauce – it’s the epitome of Christmas. The festive period has seen an explosion of this flavour, with numerous supermarkets and cafes now serving up brie and cranberry sandwiches, but you can also get your fix at home by whizzing up this recipe.
It works well as an appetiser on Christmas day, a mid-morning (or even a midnight) snack, or as a contribution to a potluck dinner party.
Brie and Cranberry Flowers Recipe
Ingredients:
For the brie and cranberry flowers
- 1 sheet of puff pastry
- 200g brie
- Cranberry sauce
- Chopped nuts (walnuts are a good choice)
For the egg wash:
- 1 egg yolk
- A teaspoon of milk
- Honey for drizzling
- Rosemary
Method:
- Make sure your brie is cold by putting it in the freezer for 30 minutes.
- Preheat the oven to 180 degrees celsius.
- Cut the pastry sheet into four equal rectangles and lay them on a flat surface.
- Cover each pastry square with a layer of cranberry sauce. Then slice your cheese into long thin strips and layer them on top.
- Roll it up carefully, starting from the longer edge, and then cut through the middle of the roll lengthways so you have two halves.
- With each half, roll it up again with the exposed brie and cranberry side facing up (so that it looks a bit like a rose).
- Tuck the loose ends underneath and place your 8 flowers on a baking sheet.
- Sprinkle with salt and pepper and then brush with the egg wash (a combination of your egg yolk, rosemary and milk).
- Bake for 30-35 minutes until they are crunchy and flaky then drizzle with honey as soon as they are out.
