The hype around matcha is going nowhere. Since the start of 2024, Google searches for the green-hued powder have soared by 4,614 percent, and dedicated cafes are popping up all over the place. It’s not all about drinks either: matcha is also increasingly being used in food recipes, adding flavour and nutritional value to dishes. With Shrove Tuesday just a couple of weeks away, the dish we have our eyes on is matcha pancakes – and we’ve got a recipe below.
What Are The Benefits Of Matcha?
- It offers a gentler caffeine release to coffee, meaning many drinkers experience a more sustained energy boost.
- It’s rich in antioxidants including catechins, which help ward off illness, as well as vitamins A, B, C and E, which offer a plethora of benefits ranging from boosting immunity to supporting skin health.
- Studies have shown matcha may boost brain health, both in the short and long term.
- It contains L-theanine, which helps the body relax by reducing cortisol.
How To Make Perfect Pancakes
There’s not one hard and fast rule when it comes to mastering pancakes, but there are some general rules chefs recommend:
- Allow your batter to chill for at least 30 minutes before cooking.
- Don’t overmix the batter – this can lead to rubbery pancakes.
- The key question: when to start flipping? When you see bubbles, apparently, or lift the base to check if it’s golden.
Matcha Pancakes Recipe
Ingredients:
- 1 cup all-purpose flour
- 1 tbsp granulated sugar
- 1 tbsp matcha powder
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup milk
- 1 large egg
- 2 tsp of The Groovy Food Company Light Agave Nectar
Method:
- In a medium bowl, mix together the flour, sugar, matcha, baking powder, and salt. Add in the nectar, milk and egg. Mix until smooth.
- Heat a large skillet over medium heat and spray with cooking spray. Scoop 1/3 cup of the batter for each pancake. Flip when the bubbles are covering the surface. Cook the other side until it is golden.
- Top with yogurt, berries and drizzle with more agave nectar to taste. Enjoy.
