Pancakes aren’t the hardest dish to master – but we’re all for making recipes even easier. So our interest was piqued when we spotted the latest hack from TikTok chefs, who have found a way to whizz up a decent stack using just two ingredients. You might have had ice cream on top of your pancakes before, but what about using it to create the pancakes themselves?
How To Make TikTok’s Ice Cream Pancakes
Typically, pancake batter is made using a mix of flour, sugar, baking powder, milk and eggs. However, TikTokers have discovered you can use ice cream instead, as it already contains the majority of ingredients mentioned above (it’s made using milk, cream, sugar, frozen using special culinary techniques).
All you need to do is mix a scoop of ice cream with self-raising flour – some recipes add a dash of milk, particularly if the ice cream is very frozen. Then, continue as you normally would with pancakes: drizzle some oil or butter into a pan, and fry the pancakes in small circular shapes. Ingredients:
- 1 scoop of ice cream (most recipes use vanilla but you could jazz up your pancakes with another flavour)
- 120g self-raising flour
- Oil or butter
- Your choice of toppings
Method:
- In a bowl, mix the ice cream and the self-raising flour to make a batter.
- Heat some oil or butter in a pan.
- Pour some of the batter into your pan to form a circular shape.
- Cook for a few minutes on each side until golden.
- Top with whatever toppings you fancy.
Tip: You can make the pancakes vegan by using a dairy-free ice cream and opting for oil over butter.
Top Tips For Perfect Pancakes
- Don’t mix the batter too much – this will make the mix too tough (a few lumps are fine, according to the experts).
- Allow the batter to rest for around 30 minutes before cooking. This will help achieve that fluffy texture.
- Cook your pancakes on a low heat so they cook all the way through without burning.
