A nourishing dish for the new season

Last year, TikTok was taken over by Marry Me Chicken: a dish so good it might just warrant a proposal. Made with ingredients like sun-dried tomatoes, parmesan cheese, fresh basil and cream, the Tuscan-inspired chicken dish inspired a trend for other ‘Marry Me’ recipes – from ramen to soup. And now butter beans have entered the chat.

The humble bean is in the limelight right now, with TikTok chefs showcasing their versatile potential through dips, curries and most recently Marry Me Butter Beans: a stew-like dish which incorporates many of the same ingredients as the original. A creamy, herby recipe, it’s best served with some crusty, buttered bread – perfect for cosy autumn evenings. Here’s how to make it at home.

Recipe: Marry Me Butter Beans

Ingredients:

  • Olive oil
  • ½ red onion
  • 3 cloves garlic
  • 1 can butter beans
  • 70g sun-dried tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Handful of spinach
  • Handful of chopped basil
  • 100g cream
  • Optional: sprinkle of parmesan

Method:

  1. Chop the onion, garlic and sun-dried tomatoes.
  2. Heat some olive oil in a large pan and fry the onion and the garlic, along with a sprinkle of salt and pepper. Allow this to cook for a few minutes.
  3. Add the sun-dried tomatoes, oregano and thyme and cook for a few minutes.
  4. Pour in the butter beans, along with their liquid. Allow everything to simmer for five to 10 minutes on a low heat.
  5. Add the spinach and chopped basil and stir it into the sauce until wilted.
  6. Swirl in the cream and parmesan, and grate in the cheese.
  7. Serve with warm crusty bread.

Top Tips:

  • Choose good quality butter beans, such as the Bold Bean Co.
  • This is a great option for meal prep, as it can be stored in a container in the fridge for a couple of days.
  • It could also be made vegan by removing the cheese and switching the cream for a plant-based version.
