Meghan Markle’s Truffle Popcorn Recipe Is Trending

Love it or hate it, there’s no denying Meghan Markle’s Netflix show has got people talking – and cooking. Since the series launched, Waitrose has reported a surge in sales for specific ingredients featured, from focaccia (up 86 percent) to edible flowers (up 200 percent). But the item which has seen the biggest spike? Truffle salt, used in Meghan’s popcorn recipe. Intrigued? Here’s how to make it at home.

Meghan Markle’s Truffle Popcorn Recipe

There’s nothing like settling down to a film at the cinema with a big box of popcorn. But how do you recreate the magic when watching a movie on your sofa? Meghan Markle thinks she’s found a hack for the ultimate moreish, salty, crunchy snack. In With Love, Meghan, she shares her newfound recipe, in which she puts a dried corn cob in a paper bag, seasons it with truffle oil, truffle salt and flaky salt before putting it in a paper bag and microwaving it. The bag then puffs up into a cinema-style treat, with a luxurious truffle flavour.

But if you haven’t got corn on the cob (or a microwave, for that matter), fear not. Netflix’s website Tudum has shared a recipe for viewers keen to recreate the popcorn at home using just traditional popcorn kernels, which are cooked on the hob.

Ingredients:

• 1/3 cup dry popcorn kernels
• 2 tablespoons neutral oil, such as vegetable oil or avocado oil
• Truffle oil, to taste
• Truffle zest, to taste
• Truffle salt, to taste
• Flaky salt, to taste

Method:

1. Heat oil in a large pot over medium-high heat with 1 or 2 popcorn kernels.
2. When those two kernels pop, you know your oil is at the right temperature. Remove the kernels if still in the pot and immediately add the rest of the kernels.
3. Cover the pop with a lid, leaving a small slit for steam to escape.
4. You know your popcorn is done when the popping sound reduces to a pop every 2-3 seconds.
5. Quickly transfer the popcorn into a bowl and drizzle with truffle oil. Toss to coat.
6. Season with the truffle zest, truffle salt, and flaky salt, and toss again.
7. If you aren’t enjoying the popcorn right away, allow it to cool completely before packaging it up.
