Recipe: Mulled Pears
Ingredients
- 1 Bottle of robust red wine
- 500ml water
- 200ml Orange Juice
- 125g Caster Sugar
- 2 Cinnamon Sticks
- 6 Cloves
- 2 Star Anise
- 2 Chunks Stem Ginger
- Zest of 1 Unwaxed Lemon
- 6 Firm Pears
Directions
- Put all the ingredients expect the pears into a heavy bottom saucepan and bring to the boil – simmer for 10 minutes
- Peel and cut the bottoms off the pears (allowing them to stand upright)
- Add the pears and bring back to a gentle simmer
- Poach for around 30 mins – until soft, turning occasionally
- Remove the pears, strain the poaching liquid and add back to the heat to reduce by half until syrupy
- To serve, sit the pears upright and cover with the poaching syrup
