Another month, another whole host of exciting new restaurants to get our teeth stuck into. May is looking like another promising month on the capital’s foodie calendar, with some hotly anticipated culinary spots primed to open their doors. From Somerset House’s brand new bar to a New York-inspired brasserie at the NoMad hotel, here are all the new London restaurants opening this May.

Setlist at Somerset House
The coolest spot for drinks in London this summer? Setlist, the new bar soon to arrive on the riverside terrace of Somerset House. Conjured up by a team of London’s top hospitality talent, including James Dye, the co-owner of rooftop hangout Frank’s in Peckham, and Thomas Kidd of Bar Elba, the new venue will bring together food, music, and art. Guests can enjoy food from four female chefs: there are Caribbean plates from Opeoluwa Odutayo, pizzas from Sophie Wyburd, Mexican dishes from Andrea Montes Renaud and Laura Copp (the duo behind Masafina), and ice cream sundaes from pastry chef Terri Mercieca. Alongside this, there will be live music and summer cocktails, from blood orange margaritas to classic Pimm’s.

Pyro
Chef Yiannis Mexis has spent years honing his craft in prestigious kitchens like The Ledbury and HIDE – but now it’s time to go solo. His debut restaurant, Pyro, will open this May in Southwark, bringing Greek flavours to the capital. Named after ‘pyr’, the Greek word for setting things ablaze, the restaurant is centred around a huge open fire, which will be used to grill seafood, meat and vegetables. Think slow-cooked Dorset lamb, charred aubergine, barbecued octopus in a spiced red wine, and whole Cornish turbot. Also sure to be a highlight is the large bar and outdoor terrace, where Ana Reznik has curated a list of signature cocktails featuring Mediterranean ingredients, like floral jasmine, olive oil and saffron.

Town
From pasta restaurant Pastaio to the JOY pop-up at Portobello Docks, Stevie Parle is the name behind a string of buzzy London openings. And now he’s back with another: Town, a new restaurant opening on the West End’s Drury Lane this May. This one is all about bringing regenerative farming into the spotlight, showcasing the best of British produce including meat from Wildfarmed Beef. Chef Olly Pierrepont will be heading up the kitchen, with the opening menu including dishes like wood-grilled Romney Marsh hogget, Welsh lobster with lardo, and south Indian fish curry. ‘Town is the biggest, most ambitious project I’ve ever done,’ says Parle. ‘We are helping to pioneer a genuinely new approach to restaurant supply chains, built on knowing every farmer who grows what we cook.’

Myrtos
Another Greek-inspired eatery coming to London this May is Myrtos, a new venture from Athens-born chef Asimakis Chaniotis, who earned his stripes working in one of London’s most refined restaurants, Pied à Terre. Named after an idyllic beach on the island of Kefalonia, Myrtos will feature Mediterranean-inspired interiors, with a central olive tree and moon-like lamps hanging from the ceiling. Dishes are designed to be shared, with highlights including lobster giouvetsi with orzo, lamb belly skewers, and whole squid served with a Greek chimichurri. There will also be a cheese trolley presenting Greek delicacies like Smoked Gais and Mizithra, plus cocktails from esteemed Athens bar Line, which secured the sixth spot in the latest World’s 50 Best Bars list.

Twenty 8 NoMad
US-born hotel NoMad London will unveil a new restaurant this May, taking the place of the former Atrium restaurant. Paying homage to its American roots, the eatery will bring a taste of New York to the capital, reimagined through the lens of a French brasserie. The menu will include the likes of grilled flatbread – made using a secret recipe from a pizzeria in Little Italy – as well as crudites inspired by Union Square Greenmarket and the famed NoMad Chicken, served with black truffles and foie gras. A dedicated martini menu, meanwhile, will take diners on a journey through the evolution of the cocktail, from the Martinez to the Twenty8 Martini, finished with a smoked olive and blue cheese garnish.

SINO
Ukrainian food is having a bit of a moment here in London, thanks to a string of exciting openings like Mriya Bistro and the just launched Tatar Brunar. The latest to add to the roster is SINO, opening this May in Notting Hill, helmed by founder Polina Sychova and chef Eugene Korolev. This will blend traditional Ukrainian fare with western cooking techniques: expect flavoursome, unique dishes such as hay-infused wild mushroom broth, cherry glazed BBQ catfish, and oxtail with spicy beef broth. On the drinks side, diners can sip equally inventive cocktails like the Buckwheat Milk Punch, made with flavors of buckwheat, cardamom, vanilla and aged rum.
