6 New London Bars Added To The Pinnacle Guide

The Pinnacle Guide is a new recognition system designed to spotlight bars with impressive eco-friendly practices. Its inaugural list was revealed earlier this year, highlighting bars from all over the world – from a plant shop serving biodynamic cocktails in Kentucky to a cocktail lounge in rural Scotland. And now a number of newbies have been added to the guide, including six spots in London, one of which is the first to secure the coveted 3 PIN status.

Which Bars Have Received PIN Status?

The guide’s first 3 PIN bar is Lyaness, found within the Sea Containers hotel on London’s Southbank. Helmed by award-winning bartender Ryan Chetiyawardana, Lyaness is known for its innovative approach to ingredients and techniques, such as parallel fermentation and cryogenics. ‘There was a resounding consensus from our assessors and reviewers that Lyaness embodied a meticulous, yet effortless sense of hospitality – and a commitment behind the scenes to its team that truly set it apart,’ says The Pinnacle Guide co-founder, Dan Dove.

Silverleaf, the cocktail bar within the Pan Pacific London hotel, was added to the guide as a 2 PIN venue. Opened in 2022, its drinks are inspired by nature and the elements, combining recognisable ingredients with lesser-known flavors, like rhubarb and tonka fusion.

Four London bars have been awarded 1 PIN status, including glitzy Mayfair spot Bacchanalia and The Dorchester’s Vesper Bar. Viajante87 in Notting Hill was another new addition, the sister venue to Mexican restaurant Los Mochis, which is centred around a zero-waste philosophy, with cocktails made using off-cuts and waste ingredients.

The Pinnacle Guide was created by Hannah Sharman-Cox, Siobhan Payne and Dan Dove, the masterminds behind London Cocktail Week. It’s designed to celebrate excellence in drinks and service, but with a focus on philanthropy, sustainability and diversity, highlighting the spots who are approaching their craft responsibly.
