This milky soft cheese has a cult following, recurring in diet fads thanks to its low calorie, high protein composition. This time, however, cottage cheese is being used to whip up a bread substitute, and the result has a huge fanbase on TikTok. Strange, but stick with us. Here’s exactly how to make a cottage cheese flatbread, plus why it’s healthier than it sounds.

Recipe: Cottage Cheese Flatbread
Makes one flatbread
Ingredients
- 250g cottage cheese
- 2 eggs
- Garlic power, salt and pepper (for seasoning – although you can use whatever you like)
- Oil
Equipment
- Baking tray
- Baking paper
- Spoon
- Spatula
Method
- Preheat your oven to 220°C (or 200°C if it’s a fan oven).
- Line your baking tray with baking paper, and grease with oil (spray oil works best, or just spread normal oil or margarine around on the paper).
- Add the cottage cheese and the eggs to a bowl. Season with garlic powder, salt and pepper, and mix thoroughly with a spoon. You can also mix in a blender if you prefer.
- Pour the mixture onto the tray, and spread into a thin layer with a spatula. You can spread it into a circle or just to the shape of the pan.
- Bake for 20 minutes or until lightly browned. Remove from the oven and leave to cool for five minutes.
- Fill the flatbread with your desired fillings as you would a traditional flatbread, sandwich or wrap, and serve. Enjoy!
