There’s nothing like a buttery, flaky croissant to kick off your day – but for the gluten-intolerant among us, the beloved pastry is normally a no-go. However, TikTok’s foodies have found a nifty solution: dipping layers of rice paper in batter, rolling them into a crescent shape and baking them until golden to create the ultimate coeliac-friendly croissant.

What Is A Rice Paper Croissant?

The rice paper croissant trend is all over TikTok right now, but it all began with social media chef @twaydabae. Her viral recipe (which has amassed over 60k views) uses rice paper sheets – thin, edible layers of wafer paper – to create a croissant. The sheets are soaked in an egg-based batter before being cut up, rolled into a croissant shape and baked in the oven until they achieve that perfect crispiness. This has sparked a string of videos of different takes on the trend, from mini versions to a savoury pastry made with ham and cheese.

Because the croissants are made with rice paper rather than wheat, they are suitable for coeliac or gluten-intolerant diners, as rice is gluten-free in its pure form. Rice paper sheets are very thin, slightly chewy sheets of paper traditionally made from rice flour, salt and water. They’re used in a variety of dishes, including wrapping fresh vegetables or meat for spring rolls, creating dumplings or making wraps for sandwiches, but the rice paper croissant may be their best use yet.

Makes 1 croissant

Ingredients:

  • 2 eggs
  • 25g melted butter
  • ½ tsp cinnamon
  • ½ tsp baking powder
  • 1 tsp sugar
  • 5 sheets of rice paper

Method: 

  1. Preheat the oven to 180 degrees celsius. 
  2. In a bowl, mix together the eggs, milk, butter, cinnamon, baking powder and sugar. Pour the mixture onto a large plate.
  3. Individually dip the sheets of rice paper into the mixture, then lay the sheets on top of one another on a chopping board. 
  4. Cut the rice paper into thirds to make three rough triangular pieces. 
  5. Lay one of the triangle stacks in the centre, then add one stack vertically and another horizontally. Roll the rice paper towards the tip of the triangle to create a croissant shape.
  6. Line a baking sheet and place the croissant on top. 
  7. Bake in the oven for 30 minutes until golden and crispy.
