We’ve all been there: you’re frying up some pancakes, but when the time comes for flipping, it all goes wrong and you’re left with a scrambled mess. But what about if that was the goal all along? Say hello to scrambled pancakes, TikTok’s latest obsession – a literal mash-up of the traditional brunch treat. Here’s how to make your own at home.

What Are Scrambled Pancakes?

Scrambled pancakes are made by pouring batter in a pan, and instead of flipping the mixture while trying to keep the circular shape, using a spatula to break up the pancakes into small pieces. The dish has gained popularity in the US recently, with a spate of recipe videos doing the rounds on TikTok – a recipe video from @ArchivedChef, for instance, has amassed millions of views. ‘It’s so much easier this way. You don’t have to worry about getting the perfect circle,’ she says.

However, users were quick to note its similarity to a traditional Austrian dish, kaiserschmarrn: a sweet, fluffy pancake which is torn into bite-sized pieces, then caramelized and served sprinkled with powdered sugar and other toppings.

Scrambled Pancakes Recipe

We’ve scoured TikTok to create the ultimate scrambled pancakes recipe.

Ingredients:

  • 100g plain flour
  • 2 eggs
  • 1 tbsp melted butter (plus some for frying, or you can use oil instead)
  • 300ml milk (or a dairy-free alternative such as almond or oat milk)
  • A pinch of salt
  • Toppings of your choice

Method:

  1. Pour the flour into a mixing bowl with a pinch of salt.
  2. Crack two eggs into a bowl, and whisk them.
  3. Pour the eggs into the flour mixture and add the milk.
  4. Whisk the mixture into a smooth batter. Let it sit for five to ten minutes.
  5. Heat the butter in a pan, and pour in the batter.
  6. Let the batter sit in the pan for around 30 seconds. Then, instead of flipping it, fold the mixture onto itself, and use the spatula to begin breaking it up into pieces.
  7. Move the pieces around the pan to ‘scramble’ them, just like you would with eggs.
  8. Allow the pieces to cook through and crisp up. Once they turn a golden brown colour, they are ready. 
  9. Place the scrambled pancakes onto a plate, and finish with your choice of toppings. You could go for the classic lemon and sugar, strawberries and chocolate sauce, or anything else you fancy.
