Michelin-starred chef Jeremy Chan has teamed up with Toklas Bakery
Londoners are spoilt for choice when it comes to Christmas sandwiches. Around this time of year, the city’s bakeries, cafes and shops bring out suitably festive creations – from giant sarnies stuffed with turkey and cranberry to gravy-dipped bagels and much more. But the latest launch really cuts the mustard: a collaboration between chef Jeremy Chan of the two Michelin-starred Ikoyi and its neighbour Toklas Bakery.
Toklas Bakery Teaming Up With Ikoyi On A Festive Sandwich
Launching this week at Toklas Bakery, the sandwich was created by Chan alongside Toklas’ head chef Kyran McAdam, combining Chan’s signature flavours with the ingredient-led approach of the bakery.
Offering a new twist on the Christmas sandwich, the dish sees a brioche bun piled with roast chicken, seasoned with a scotch bonnet emulsion, alongside celery maple candied bacon. This is then topped with a Montgomery cheddar omelette and marmalade, made of rare citrus from the Todolí Citrus Fundacio, who has provided the fruit to Toklas since its opening.
It doesn’t come cheap: a sandwich will set you back £13, but £1 of that will go to charity homelessness charity StreetSmart.
Toklas Bakery is part of Toklas, a Mediterranean restaurant located between the Strand and the River Thames. It serves an impressive spread of pastries – croissants and cardamom buns in the morning, followed by freshly baked sandwiches and pizza slices at lunchtime.
Ikoyi, meanwhile, is one of London’s buzziest restaurants, found nearby at 180 Strand. Founded by Chan alongside Iré Hassan-Odukale, the eatery combines West African spices with British ingredients, focusing on organic meats, biodynamic vegetables and fish from UK waters. It serves a £350-a-head tasting menu, with a shorter lunch menu available on Wednesdays and Thursdays at £200.
