Cucumbers are in vogue
You might not think much of a cucumber, but the humble fruit is having its time in the limelight right now. That’s in so small part down to TikToker Logan Moffitt, a cucumber megafan whose recipes have taken off on the platform recently. He has amassed millions of views for his videos, which showcase new ways to incorporate cucumber into dishes – from kimchi to potato salad and sushi. But one recipe in particular has been getting attention lately: the cucumber salad.
How To Make The Trending Cucumber Salad
Cucumber is popular in Mediterranean cuisine – a staple ingredient in the beloved Greek salad, made with feta, red onion and tomatoes. But it’s also widely used in Asian fare, where it’s used to make things like pickles and kimchi. Logan’s viral cucumber salad goes down this route. ‘Sometimes you need to eat an entire cucumber,’ he says, before proceeding to use a mandoline slicer to chop one up. He then mixes it with soy sauce, fish sauce, sugar, green onions, sesame oil and toasted sesame seeds – plus MSG, a common yet controversial additive found in many processed foods (you could easily make this recipe without it, though). All the ingredients are then shaken up together in a jar.

If that doesn’t float your boat, check out his ‘cucumber is brat’ salad, which mixes cucumber with feta, Greek yoghurt, garlic, mint and lemon juice.
What Are The Benefits Of Cucumber?
Cucumber is a nutritious fruit offering plenty of health benefits. It is high in potassium, magnesium and dietary fibre, which are all associated with good heart health, as well as having a high content of antioxidants. Plus, it has a high content of vitamin K, which is important for bone health. Being water-based and high in electrolytes, cucumbers are also one of the most hydrating foods out there – meaning they’re particularly beneficial in the summer months.
