The accolade recognises restaurants' environmental practices


The 2021 Michelin guide welcomed a new feature: the Green Star, which highlights restaurants leading the way in sustainable dining. ‘They hold themselves accountable for both their ethical and environmental standards, and work with sustainable producers and suppliers to avoid waste and reduce or even remove plastic and other non-recyclable materials from their supply chain,’ says the guide. It’s an exclusive club to be in: just 33 restaurants have been awarded the accolade, including six new entries from the 2024 guide.

What Is A Michelin Green Star?

A Michelin Green Star is a recently introduced award from the Michelin Guide, designed to highlight the restaurants with commendable environmental practices.

Many of these restaurants work directly with farmers, growers and fishermen and use regenerative methods such as no-dig vegetable gardens. They also ensure a high quality of life for their staff, and often contribute to charity and education projects. Details of these practices are outlined in their entry.

Since restaurants can only qualify for the Green Star if they have been awarded a Michelin star, Bib Gourmand or plate distinction, this stresses the importance of sustainability in food excellence. It’s a big step for the future of fine dining.

There’s no specific formula as such, but inspectors look at factors like:

  • The provenance of ingredients
  • The use of seasonal produce
  • The restaurant’s environmental footprint
  • Food waste systems
  • Recycling

Which Restaurants Were Awarded Green Michelin Stars In 2024?

In the recently released 2024 guide, a total of 33 restaurants were listed as having a Michelin Green Star. There were six new additions:

  • ANNWN, Narberth
  • Exmoor Forest Inn, Simonsbath
  • Forge, Middleton Tyas
  • Interlude, Lower Beeding
  • St. Barts, London
  • The Whitebrook, Whitebrook

They join a collection of restaurants who have retained their stars from last year. That includes Raymond Blanc’s Belmond Le Manoir aux Quat’ Saisons in Oxfordshire alongside The Black Swan, a cheerful pub in Oldstead with a stellar tasting menu. The UK’s first zero-waste restaurant, Silo, also has a Green Star. Founded by Dougie McMaster, Silo began its life in Brighton before relocating to Hackney Wick in London. Hugh Fearnley Whittingstall’s River Cottage Kitchen, Simon Rogan’s L’Enclume and Daylesford also have Green Stars.
