Level up your bacon-wrapped sausages this season
The ‘marry me’ recipes trend first blew up at the end of last year, when a chicken dish was deemed so good it would spark a proposal. Made with Tuscan ingredients like sun-dried tomatoes, basil and parmesan, the recipe went viral on TikTok – and since then, we’ve had all sorts of twists on the dish, from ramen to butter beans. The latest? A festive edition: marry me pigs in blankets, which sees bacon-wrapped sausages (the ultimate Christmas snack) cooked in a creamy, herby sauce. We’ve nabbed one of TikTok’s most popular recipes right now, created by chef and food writer Amy Sheppard.
Recipe: Marry Me Pigs In Blankets
Feeds 4
Ingredients:
- 8 sausages
- 16 rashers of smoked streaky bacon
- 1 onion finely sliced
- 3 cloves of garlic finely chopped
- 300ml double cream
- 200ml chicken stock
- 1/2 tsp oregano
- 10 sundried tomatoes finely chopped
- 50g finely grated fresh parmesan cheese
- 70g fresh spinach leaves
Method:
- Heat the oven 190C fan
- Tear each of the sausages in half so you have 16 sausages.
- Press down the open sausage ends to neaten. Wrap each sausage piece in a rasher of bacon.
- Place the sausages on a lined baking tray. Bake for around 20 minutes turning once or until the bacon is crisp and the sausage is cooked through.
- Heat a drizzle of oil in a large non-stick pan.
- Add the onion to the pan and fry for 5 minutes until soft. Stir in the garlic for the final minute.
- Stir the double cream and chicken stock into the onions, before adding the oregano, sun-dried tomatoes and parmesan. Gently bring to the boil, stirring until the paresan has melted.
- Season with salt and pepper and stir in the spinach. Stir until wilted.
- When the sausages are cooked through, add them to the sauce and serve on a bed of mash or rice.
