Is this the ultimate autumnal breakfast?
‘Tis the season… to mix pumpkin spice into just about everything. Lattes, cocktails, pancakes, the autumnal flavour has made its way into all sorts of drinks and dishes already, and now TikTokers have discovered a way to incorporate it into their breakfast. Enter the pumpkin spice chia pudding, the latest recipe to go viral on TikTok.
This is made in the same way you would with a classic chia pudding: by combining chia seeds, milk and flavourings then soaking them overnight. But it adds pumpkin spice into the mix too, along with other ingredients, such as nut butter and maple syrup, to create a dish that resembles pumpkin pie.

Is It Healthy?
A chia pudding is a healthy breakfast option. Chia seeds may be tiny, but they pack a serious punch when it comes to nutrition, packed with omega-3 fatty acids and antioxidants, plus minerals including magnesium and potassium. They’re also high in fibre, which is essential for good gut health, and will help keep you fuller for longer.
The addition of pumpkin puree adds an extra dose of nutrients, as pumpkin is rich in vitamin A (beneficial for your immune system), vitamin C (helps the body produce collagen and works as an antioxidant), and potassium (supports healthy blood pressure). Nut butter, meanwhile, is a great source of protein.
Maple syrup, however, is high in sugar. You could substitute this for honey or date syrup to reduce the sugar content, or remove it entirely.
