The Cotswolds land they farm is worked sustainably, using zilch pesticide or synthetic fertiliser. You’ll find the Gibson folk sewing oh-so-pretty wildflower meadows — for insects and birds — and planting native woodland, rather than doing anything intensive. (The only intensive bit they get involved in is all that harvesting, pressing, fermenting, maceration, bottling and labelling.)
